- Boil, peel and cube the potatoes.
- Heat Eva Cooking Oil in a pan and add onions, a few curry leaves and nigella seeds.
- Cook for a minute then add potatoes, cumin, sugar, turmeric, mustard powder and red chili powder.
- Stir fry for a minute then add tamarind pulp, lemon juice and 1 cup water.
- Cook for five minutes then add in chopped coriander, mint and green chilies.
- Mix and remove from heat.
- Serve hot with puris.
