  1. Boil, peel and cube the potatoes.
  2. Heat Eva Cooking Oil in a pan and add onions, a few curry leaves and nigella seeds.
  3. Cook for a minute then add potatoes, cumin, sugar, turmeric, mustard powder and red chili powder.
  4. Stir fry for a minute then add tamarind pulp, lemon juice and 1 cup water.
  5. Cook for five minutes then add in chopped coriander, mint and green chilies.
  6. Mix and remove from heat.
  7. Serve hot with puris.
